💫 Elyse Remigio, Director of Catering

I actually grew up in this industry - so for me, this isn’t just what I do, it’s truly who I am.

I was introduced to the catering world at just 8 years old through my family, and by the time I was a young teenager, I was already working events. At 16, I sold and planned my very first wedding from beginning to end - and I’ve been hooked ever since.

Over the years, I’ve had the opportunity to work in just about every position you can imagine - dishwasher, server, bridal attendant, captain, maitre d’, receptionist, and more. That experience has given me a true understanding of what it takes behind the scenes to execute a flawless wedding. I’ve learned every detail, every moving part, and every moment that matters in creating a seamless and unforgettable experience.

Because of that, I don’t just plan weddings - I anticipate them. I understand not only the logistics, but also the emotions, the pressure, and the importance of getting every single detail right. That foundation has shaped how I approach every wedding today.

What I love most is that no two weddings are ever the same. Every couple brings a different story, a different vision - and being trusted to bring that to life is something I never take for granted.

There’s a moment at every wedding that gets me… when everything comes together. The room reveal, the first dance, the energy on the dance floor - it’s that feeling of knowing we helped create something people will remember forever.

But beyond all of that, it’s the relationships. Being there for our couples, guiding them, supporting them, and celebrating with them - it’s incredibly special.

This industry is fast-paced and demanding, but for me, it’s second nature. I’ve grown up in it, and I truly couldn’t imagine doing anything else.

I found my way into this industry a little differently - but the moment I stepped into it, I knew I loved it.

I started at 23 years old in Manhattan as an event planner for a country club, where I was first introduced to the fast-paced, detail-driven world of events. From there, I spent several years in the city focusing on corporate events, building a strong foundation in organization, logistics, and client experience.

While I loved the energy and precision of corporate planning, I always felt drawn to something more personal - and that’s what ultimately brought me back to Long Island and into the wedding world.

That’s where everything clicked.

What I love most about weddings is the connection. It’s not just about planning an event - it’s about getting to know each couple, understanding what matters most to them, and helping bring that vision to life in a way that feels authentic and meaningful.

My background has made me incredibly detail-oriented and organized, which allows me to guide couples through the process with confidence and ease. I want them to feel excited, supported, and completely taken care of from the very beginning.

There’s something so special about being part of such an important moment in someone’s life - from the first conversation to the day they say “I do.” It never gets old, and it’s something I truly cherish.

The Wedding Memories

It’s honestly so hard to choose just one memory, because there have been so many incredible moments over the years—but there are two that will stay with me forever.

The first goes all the way back to the very beginning of my career—my first wedding. That couple stayed with me throughout my journey, trusting me again and again through life’s biggest milestones. I had the honor of planning their son’s bris, then his bar mitzvah, and most recently… his wedding. Sitting in the front row next to his parents, watching him get married, I was crying my eyes out. It was such a full-circle moment and a reminder of how deeply rooted these relationships become. You’re not just part of one day - you become part of a family’s story.

The second is something I will never forget. I had the honor of hosting the first same-sex weddings on Long Island the moment it became legalized - 100 couples, all at once. The energy, the emotion, the love at that gazebo, and then the party after… it was overwhelming in the best possible way. There wasn’t a dry eye anywhere. Being part of such a historic and meaningful moment, where people were finally able to celebrate their love openly, was truly one of the most powerful and exhilarating experiences of my life.

Moments like these are why I do what I do. Weddings aren’t just events - they’re memories, milestones, and stories that last a lifetime, and I feel incredibly lucky to be a part of them.

There have been so many special moments over the years, but one that will always stay with me is something that didn’t happen on the wedding day - it happened in a handwritten card.

I had a couple who told me they chose our venue not because of the venue itself, but because of me. They said they felt like they needed me there on their wedding day. That I accepted them without question, supported them through everything, and made them feel seen - even when their families didn’t - especially during the stressful moments or even the days they just needed someone to talk to.

After their wedding, they gave me a handwritten card explaining how much I meant to them throughout the process. I remember reading it and just feeling completely overwhelmed - in the best way. It was one of those moments where everything really clicked for me.

It made me realize that what we do is so much more than planning weddings.

This isn’t just a job - it’s something that truly impacts people’s lives.  What I do is make sure one of the most important days of someone’s life is everything they dreamed of and more. And knowing that I can be that kind of support for someone during such a meaningful time is something I will never take for granted.

That moment reminded me exactly why I love what I do.

I’m also someone my couples truly lean on. I’m honest, direct, and fully invested—I’ll guide you, support you, and make sure you feel confident every step of the way. I pride myself on being accessible and responsive, and I’m available by cell phone 7 days a week so you always feel supported whenever you need me.

How many guests can you accommodate?
Our ballroom comfortably seats up to 260 guests with a dance floor, and up to 300 guests without—giving you flexibility depending on your vision and layout.

Do you offer indoor ceremony options?
Yes! We offer beautiful indoor ceremony options, so you always have a seamless and elegant backup plan—no matter the weather.

Can we have a sunset wedding?
Absolutely! Our evening weddings are perfectly timed around sunset, allowing you to say “I do” or transition into cocktail hour just as the sky turns golden. It’s truly one of the most magical parts of the Gatsby experience.

Do you offer all-inclusive packages with vendors?
Yes, we do! We can create a fully inclusive wedding experience, coordinating everything from your entertainment to photography and more. If you’re looking for a stress-free planning process, we’ve got you covered from start to finish.

What is the price per person?
Our pricing varies based on the time of year, day of the week, guest count, and overall style of wedding you’re envisioning. Packages typically range from $119 per person to $250 per person, allowing us to customize an experience that fits your vision and budget.

Do you have guest count minimums?
Yes, minimums vary depending on the day and season:

  • Daytime or weekday weddings: as low as 50 guests

  • Friday evenings: 120 guests

  • Saturday evenings: 150 guests

  • Sunday evenings: 100 guests

During the off-season, we also offer a more intimate Romance Package for up to 90 guests, available any day of the week—perfect for smaller, more personal celebrations.

How early can we arrive on the day of our wedding?
You’ll have access to the venue approximately 2–3 hours prior to your event, giving you plenty of time to get settled, take photos, and prepare for your big moment.

When I’m not at work, my world revolves around my family. I’m a mom first, and so much of what makes me smile comes from spending time with my kids  - whether we’re traveling, exploring new places, or just having those everyday moments together.

I love planning trips (probably not surprising 😊), especially ones that create lasting memories. I’m always thinking about the next place to go, the next experience to have, and how to make it special.

I also genuinely love what I do, so even outside of work, I find myself getting inspired - whether it’s dining out, seeing new trends, or thinking of ways to make our weddings even more elevated and memorable.

For me, it’s all about creating experiences—both for my family and for my couples - and that’s what truly makes me happy.


💕 Heather Breitman, Sales Manager

When I’m not working, I love spending time with my friends and family, trying new restaurants, and relaxing by the beach.

I’m definitely someone who enjoys a good balance of going out and relaxing. Whether it’s a fun night out, a beach day, or just unwinding with a good show, I’m all about enjoying the moment and recharging.

I also love anything that makes people laugh (which probably makes sense 😊), and I try to bring that same energy into my work - keeping things light, fun, and positive.

At the end of the day, I’m happiest when I’m surrounded by people I love, making memories, and just enjoying life - and that’s the same feeling I want our couples to have throughout their entire wedding experience.

John is everything you want in a maître d’: professional, warm, sharp, and deeply caring. He made the entire event feel seamless.
